ButterMax™

A completely natural flavour made from cream that delivers enhanced cooked buttery flavour and dairy notes to foods and beverages is one of the latest patented innovations from Fonterra Ingredients. Marketed as Dairy Flavour 300 and ButterMaxTM, the new product has already been sold in Korea and Fonterra Ingredients is working with customers in Japan, the Middle East, North Africa, North America and Europe as well as a well known New Zealand food company.

Because of its intense cooked butter flavour, ButterMaxTM can be used at low addition rates to deliver a home cooked rounded dairy flavour. It is heat stable making it ideal for microwave foods and cooking oils and fats. It delivers a richer, fuller mouth feel to low fat foods and to foods made with vegetable oils.

ButterMaxTM is natural and contains no chemicals or preservatives and delivers a multidimensional cooked butter flavour with no flavour spikes. It blends within the application enhancing the flavour profiles potentiating tastes such as savoury, sweet and salty. Suggested uses are spreads and margarines, cooking oils, bakery products, microwaves foods such as dinners and pop corn, low fat products, confectionery, ice cream, sauces and soups, pizzas and other prepared foods.
