As consumers check and compare label declarations, and regulatory bodies stipulate what is considered to be “healthy”, there is an increasing demand for products with less fat and total sugar. However, this healthier option must be delivered with no compromise in taste or texture compared with the regular product offering.

Fonterra texturising proteins are able to reduce the fat content and the sugar content, via decreasing the milk sugars (lactose), whilst maintaining taste and texture. Depending on the unique characteristics of the yoghurt, formulation, taste and texture requirements, Fonterra will recommend the appropriate functional milk protein.

In many cases, Deluxe Protein 4862 will be used for this purpose.
